Valentine’s Day
I love entertaining on Valentine’s Day. Bringing friends together is a way for me to show the gratitude I have for them being in my life. Set a beautiful table! Purchase candlesticks. Use your cloth napkins, tablecloths and get a bouquet of flowers. Have fun!!
This year my menu is:
Appetizers: Smoked Salmon on blini, charcuterie board, veggies
Dinner: Shrimp Scampi with linguini, Caesar Salad
Dessert: Chocolate Fudge Pie (see recipe below!)
Refreshments: Rose Champagne; Chardonnay; Sparkling Water; Espresso

Chocolate Fudge Pie
No bake | Serves 6-8 people
Ingredients:
12-16oz. Semi-sweet chocolate chips - 60% cacao
1 tub Cool whip (let thaw in fridge)
1 tsp. Vanilla extract
2 tablespoons coffee (cooled)
3/4 cup mixed salted nuts
1 can whip cream (or make your own)
1 store-bought pie shell (pecan/graham/chocolate)
Filling addition options:
2 tablespoons raisins
2-3 tablespoons peanut butter
Filling addition options:
Caramel drizzle
Fresh berries
Crushed shortbread cookies
Instructions:
Add chocolate to the top of a double boiler (or use pot of water and place heat resistance bowl on top)
As the water boils stir the chocolate as it melts
Once the chocolate is melted, turn the heat down, and immediately add the whipped cream, coffee, extract, nuts, and optional ingredients. The mixture may stiffen, but keep stirring.
Immediately pour into the pie shell.
Place in the refrigerator for 2 - 3 hours.
When ready to serve, use the tip of the whip cream dispenser to decorate the pie with a pretty design.
Add any of the suggested options.
